– 300 g oat grains
– 2 mangos peeled and diced
– 2 small red peppers cleaned and finely cut into strips
– 160 g feta diced
– 2 stalks of celery cut into small cubes
– 2 handfuls of mint leaves
– EVO to taste
– salt to taste
– pepper to taste
Fill a pot with abundant salted water and cook the oat grains for ab. 45 minutes. Once cooked, drain and set the oat aside to cool. Meanwhile place mangos, celery, feta cheese and peppers in a large salad bowl.
Then, add the oat grains and toss in order to well combine all of the ingredients. Drizzle with EVO and sprinkle with salt, pepper and mint leaves. Let it cool in the fridge for at least half an hour before serving.
