Borlotti Bean & Herring Salad

Ingredients

SERVES 4

– 200 g Borlotti beans
– 200 g herring fillets
– 2 scallions thinly sliced
– 300 ml fresh whole milk
– 2 tbsps. orange juice
– 2 dashes of salt
– 1 pinch of white pepper freshly ground
– EVO to taste

Directions

Soak the Borlotti beans overnight in cold water; then rinse, drain and cook them for ab. 50-60 minutes in abundant water. Once cooked, add and leave the beans in the pot until cooled. A few hours before use, soak the herring fillets in fresh milk. Before using, drain and dry them off with kitchen paper, then cut the fillets in slices of 1 cm. Finally, gather all of the ingredients in a salad bowl and season with orange juice, EVO and pepper to taste. Stir so flavours will well amalgamate and serve.
