– 300 g cicerchia
– 500 g broccoli rabé chopped into pieces of 2-3 cm each, stalks and hard parts removed
– 1 onion sliced
– 2-3 tbsps. EVO
– vegetable broth
– red chilli pepper to taste ground
Soak the cicerchia for 2 hours in cold water; then rinse and drain. Right after, fill a pot with the vegetable broth and bring it to a boil. Meanwhile, in a pan, heat 2-3 tablespoons of EVO and let the onion sauté. Add in the broccoli rabé and let sauté a few more minutes before also incorporating the cicerchia. Cover with the broth while stirring and let everything cook for ab. 35-40 minutes. Sprinkle with a generous pinch of red chilli pepper to taste and a drizzle of EVO just before serving.
