Dhal [brown]

Ingredients

SERVES 4

– 300 g brown lentils
– 1 large onion finely sliced
– ghee (or butter) as needed
– 2 potatoes peeled and diced
– 3 tomatoes peeled and diced
– 150 g cabbage coarsely chopped
– coriander to taste ground
– cumin to taste ground
– ginger to taste grated
– turmeric to taste
– chilli pepper to taste

Directions

Soak the lentils for 2 hours, then rinse them and drain. Meanwhile, heat a little ghee in a pan and fry the onion along with ½ teaspoon of grated ginger, also adding in the potatoes, tomatoes and lentils. After ab. 3 minutes, add 2 teaspoons of coriander, 1 teaspoon of cumin, ½ teaspoon of turmeric, ½ hot chilli pepper and 1.5 litres of water. Bring it to a boil. As soon as the potatoes and lentils begin to soften, incorporate the cabbage and cook until both lentils and cabbage are very tender. Serve hot.
