– 200 g oat grains
– a bunch of Swiss chard (or any other vegetable of preference) cleaned and chopped
– 4 sun-dried tomatoes
– 1 onion finely chopped
– 2 sprigs of parsley finely chopped
– vegetable broth as required
– EVO to taste
– salt to taste
Place some EVO in a pan, followed by onion, dried tomatoes and, at last, oat grains. Sauté the previous ingredients in the pan for ab. 3-4 minutes, then add in the chard and the vegetable broth. Cook for ab. 45 minutes.
Serve topped by parsley and a drizzle of fresh EVO.
