– 300 g cicerchia
– 1 leek cut into rounds, nutmeg to taste
– 4 big zucchinis cut into rounds
– salt to taste
– 1 tbsp. EVO
– Grana Padano to taste grated
Soak the cicerchia for 2 hours in cold water, then rinse, drain and cook the cicerchia for ab. 40-50 minutes in abundant water. Meanwhile, in a pan, heat 1 tablespoon of EVO and sauté the zucchinis and leek. As soon as the cicerchia is cooked, drain and incorporate it to the vegetables, also adding in the nutmeg. Let everything sauté for few more minutes. Remove from heat and sprinkle some Grana Padano to taste right before serving.
