Split Pea & Oat Savoury Porridge

Ingredients

SERVES 4

– 200 g split peas
– 100 g oat grains
– the stem of 2 bunches of broccoli diced and outer and more fibrous pieces removed
– 80 g pine nuts
– ½ onion sliced
– salt to taste
– black pepper to taste
– EVO to taste

Directions

In a small non-stick pan, toast the pine nuts for a couple of minutes and set aside. Meanwhile, pour a little EVO in a pan, add in the onion and the broccoli and let sauté for a few minutes. Then, add in the split peas, 4 cups of water and cook for ab. 30 minutes. At this point, also incorporate the oat grains, salt and black pepper to taste and cook for ab. 40 minutes, adding more water if necessary. Sprinkle the pine nuts on top and serve it warm.
