Vegan Curried Millet

Ingredients

SERVES 4

– 150 g millet
– 2 tbsps. EVO
– 1 onion diced
– 2 garlic cloves diced
– 1 tsp. salt
– ½ tsp. cumin ground
– 2 tsps. curry powder
– red-hot chilli pepper to taste ground

Directions

In a skillet, heat some EVO over medium flame, then stir in onion and garlic and gently sauté until onion is lightly browned, ab. 10 to 15 minutes. Then, add in millet, 3 cups of water, salt and cumin. Cover and simmer for ab. 20 -25 minutes, until millet is tender and the water is completely absorbed. Finally, sprinkle over the curry powder and stir well until fully incorporated into the millet. Cook for a couple of minutes more. Dust with some red-hot chilli pepper to taste, drizzle with some EVO and serve.
