Ingredients
SERVES 4
– 320 g barley
– 2 l of your favourite beer
– 1 onion finely chopped
– 1 carrot finely chopped
– 1celery finely chopped
– bread croutons to taste
Directions
Fill a pot with abundant salted water and cook the barley for ab. 30 minutes. Once cooked, drain the water and place the barley in a terrine. Meanwhile, in a large non-stick pan, heat a little EVO and sauté the onion, carrot and celery until soft. Add in the barley and, after a few minutes, the beer (less than one glass). Continue simmering and adding water and beer until barley is completely cooked. Sprinkle with bread croutons and serve.
