Ingredients
SERVES 6
– 250 g barley
– 300 g shrimps peeled
– 1 Granny Smith apple unpeeled and finely diced
– 5 g fresh basil minced
– 6 tbsps. EVO
– a couple of pinches of salt
Directions
Fill a pot with abundant salted water and cook the barley for ab. 40-45 minutes. Once cooked, drain and let it cool. Meanwhile, parboil shrimps for a couple of minutes in non-salted boiling water and drain. Then, in a large bowl, combine the barley together with shrimps and dress with basil, EVO and the green apple. Serve it cold.
