Ingredients

– 270 g hulled chickpeas
– 50 g onions coarsely chopped
– 1 tbsp. parsley
– 1 tsp. rosemary
– 20 g Grana Padano grated
– 1 dash nutmeg ground
– 1 tbsp. EVO
– 1 pinch of pink salt
– 1 pinch of black pepper
– 2 tbsps. chickpea flour
Directions
Soak the chickpeas for 2 hours in cold water, then rinse, drain and cook the chickpeas for ab. 60 minutes in abundant salted water. Once cooked drain and rinse under running cold water. Then, put the chickpeas in a mixer and blend them along with onion, parsley, rosemary, a pinch of salt and pepper and a dash of nutmeg. Right after, place the chickpea paste in a bowl and add 2 tablespoons of flour. Stir well. Then, also add in the Grana Padano and keep stirring. At this point, grease your hands with some EVO and shape the chickpea paste into hamburgers. Place them on a large baking sheet covered with baking paper and drizzle with EVO. Bake the chickpea hamburgers in a pre-heated oven at 200°C for 20 minutes, turn them halfway through cooking time. They can be served plain, garnished with some tomato salad or prepared as proper hamburgers adding some buns, mayonnaise, ketchup and onion.
