Ingredients

– 150 g black beans
– 50 g quinoa
– 15 g breadcrumbs
– 50 g yellow sweet pepper minced
– 25 g onion minced
– 1 garlic clove minced
– ½ tsp. cumin ground
– ½ tsp. salt
– 1 tbsp. red hot chilli pepper sauce
– 1 egg, 3 tbsps. EVO
Directions
Soak the Cannellini beans for 12 hours in cold water, then, rinse, drain and cook them in abundant water for ab. 50-60 minutes. Once cooked, drain and set the beans aside. Meanwhile, in a saucepan, bring the some water to a boil, then reduce heat to medium-low, add in the quinoa and cover. Let simmer until the quinoa is tender and the water has been absorbed, ab. 15 to 20 minutes. Then, roughly mash the black beans with a fork until obtaining a paste-like mixture. At this point, add the quinoa along with breadcrumbs, bell pepper, onion, garlic, cumin, salt, hot chilli pepper sauce and egg to the black beans paste and mix until all of the ingredients are well combined. Right after, shape the black bean mixture into 5 patties by using your hands. Finally, heat some EVO in a large skillet and cook the patties until heated through, 2 to 3 minutes per side. Serve them plain or with some fresh salad and ketchup or mayonnaise on the side.
