Ingredients

– 150 g black-eye peas
– 500 g shrimp shelled and deveined
– 1 whole orange sliced
– 3 oranges juiced
– 1 lemon juiced
– 10 tbsps. EVO
– 1 bunch of chopped chives
– salt to taste
– white pepper to taste
Directions
Soak the black-eye peas overnight in cold water; then rinse, drain and cook them for ab. 50-60 minutes in abundant salted water. Once cooked, drain and transfer them into a bowl. Dress the beans with 4 tablespoons of EVO, lemon juice, salt and pepper and set aside. Meanwhile, let the shrimps marinate in the orange juice (setting aside 3 tablespoons), for ab. 30 minutes. Then, beat the remaining juice with salt, pepper, the remaining EVO and some of the chives. Right after, drain the shrimps and season them with the orange dressing. Finally, arrange the shrimps on a serving dish and place the beans around them. Garnish with the remaining chives and orange slices and serve.
