Ingredients
SERVES 4
– 300 g red lentils
– 1 orange peel grated and ½ juiced
– ½ onion chopped
– cinnamon stick to taste
– 1 carrot chopped
– EVO to taste
– salt to taste
Directions
Heat a little EVO in a pan and sauté the onion and carrot until they soften. Then, add in the lentils and cover with water. Flavour with orange peel and cinnamon; bring to a boil and let cook for 10 minutes. At this point, add the orange juice, some salt and continue cooking for 10 more minutes, until the lentils are soft. Remove the cinnamon stick, garnish each serving dish or bowl with orange zest and serve hot.
