Split Pea & Salmon Tagliolini

Ingredients

SERVES 4

– 200 g split peas
– 400 g egg tagliolini
– 150 g smoked salmon cut into strips
– 250 g double cream
– 2 spring onions finally chopped
– 4 tbsps. EVO
– salt to taste
– black pepper to taste
– nutmeg to taste ground

Directions

Soak the split peas for 2 hours, then rinse, drain and cook the split peas in abundant water for ab. 30-35 minutes. Once cooked, drain and set the peas aside. Right after, in a non-stick pan, heat 4 tablespoons of EVO and gently sauté the onions over low flame until softened. Then, add in the split peas, a pinch of salt and black pepper and let cook for 10 more minutes, adding a little more water if required. At this point, also incorporate the salmon, sauté for a few seconds and then pour in the cream. Sprinkle with black pepper to taste. Meanwhile, fill a pot with abundant salted water, bring it to a boil and cook the tagliolini until al dente. Once cooked, drain and add the pasta to the salmon and pea sauce. Let it cook for a couple of minutes more while stirring to well amalgamate. Garnish with a final sprinkle of black pepper and nutmeg and serve hot.
