Ingredients
SERVES 4
– 300 g oat grains
– 1 red cabbage finely chopped
– 1 tbsp. raisins
– ½ coffee cup apple cider vinegar
– 1 tsp. raw sugar cane
– chives to taste minced
– cumin and fennel seeds to taste
– EVO to taste
– salt to taste
Directions
Fill a pot with abundant salted water and cook the oat grains for ab. 45 minutes. Once cooked, drain and set the oat aside to cool. Meanwhile, place the red cabbage in a saucepan with a tablespoon of EVO and, while stirring, simmer it with ½ coffee cup of apple vinegar until reduced.
Then, add in the raisins, a teaspoon of raw sugar plus cumin and fennel seeds to taste. Add some water if required and keep stirring. Once the red cabbage is well cooked, add the oat and some salt to taste, tossing in order to well combine the ingredients.
Dress it with a drizzle of EVO and chives just before serving.
