Ingredients
SERVES 4
– 300 g barley
– 1 zucchini cut into sticks
– 1 carrot
– 500 g broccoli trimmed and divided into florets
– 2 fresh onions chopped into circles
– 200 g cherry tomatoes cut into wedges
– 6 tbsps. EVO
– salt to taste
Directions
Fill a pot with abundant salted water and cook the barley for ab. 45-60 minutes. Once cooked, drain and let the barley cool. Meanwhile, boil the broccoletti along with the carrot for 5 minutes, then drain and slice the carrot. Right after, in a pan, heat up a little EVO and sauté the zucchini along with carrot, onions, tomatoes and broccoletti for 3-4 minutes. As soon as they start to warm up, add in the barley and sauté. Transfer everything to a bowl and stir well. Dress with a final drizzle of EVO and serve.
