Black Rice + Asparagus & Bacon

– 300 g black rice
– 25 asparaguses
– 8 eggs
– 8 slices of smoked bacon
– butter to taste
– 4 tbsps. Grana Padano grated
– EVO to taste
– salt to taste
– black pepper to taste
– ½ lemon juiced


Fill a pot with abundant salted water and boil the rice for ab. 40 minutes. Once cooked, drain and set the rice aside. Then, in a separate pot, cook the asparaguses in salted water and lemon juice for ab. 20 minutes. Meanwhile, in a non-stick frying pan, heat a little EVO and sauté the bacon. After a couple of minutes, break the eggs on top of the bacon, making sure that the yolk stays intact and let them cook. At this point, arrange the rice in a circle, butter the asparaguses and place them over the rice. Sprinkle with the Grana Padano and then place the eggs and bacon on top. Serve hot.
