Crostate di Ciliegie – Cherry Pie

– 70g butter
– 30g coconut oil
– 1 egg
– 1 yolk
– 100g sugarcane
– 200g buckwheat flour
– 85g chestnut flour
– 1 pot of cherry jam - or other fruit of your choice


Mix flour and sugar and shape them in a fountain. Add chopped butter, the coconut oil, the whole egg and yolk in the centre. Quickly mix the ingredients with your hands until the dough is homogeneous. Wrap in transparent film and leave to rest for an hour in the fridge. Roll out the dough with the help of a rolling pin and leave a small portion aside to create the design. Butter the pan and place the dough. Add the jam by spreading it evenly.

Preheat the oven to 170°. For the design of the crostata, you can choose the classic strips or tidy balls of pastry —bake at 170° for 40 minutes on the lower shelf.
