Crunchy Large Lentil Pasta

Ingredients

SERVES 4

– 150 g large lentils
– 350 g short pasta of your choice
– 1 onion chopped
– some basil leaves chopped
– 30 g breadcrumbs
– EVO to taste
– 2 salted anchovies chopped

Directions

Fill a pot with abundant water and boil the lentils for ab. 35 minutes, adding salt just 5 minutes before the end of the cooking. Once cooked, drain and set the lentils aside to cool. Meanwhile, in a saucepan, heat ab. 4 tablespoons of EVO and sauté the onion. After a couple of minutes, also add in the lentils and anchovies, letting them simmer together for 2-3 minutes more before sprinkling with breadcrumbs. Then, boil the pasta until “al dente”. Once cooked, drain and pour it into the pan with lentils. Cook for ab. 5-6 minutes, stirring constantly to well amalgamate all of the ingredients. Dress with 3 tablespoons of EVO and stir. Sprinkle with basil and serve.
