Cuban Inspired Millet

– 200 g millet
– 1 carrot chopped
– 1 garlic clove crushed
– EVO to taste
– 1 onion chopped
– 1 green bell pepper chopped
– 1 cup vegetable broth
– 6 g fresh coriander chopped or more to taste
– salt to taste
– black pepper to taste freshly ground


Blend carrot and garlic in a food processor until obtaining a fine mixture. Then, in a pot, heat a little EVO, stir in the carrot and garlic mixture, onion and green bell pepper and sauté over medium heat for ab. 10 minutes or until soft. At this point, add in the millet, stirring for ab. 3 minutes until fragrant and toasted. Right after, pour the vegetable broth over the millet mixture, seasoning with salt and black pepper to taste. Reduce heat and simmer until all the broth is absorbed and millet is tender, ab. 20-25 minutes. Stir in the coriander and let it cook for a couple of minutes more. Then, remove from heat and let it sit for 5 minutes. Serve it tepid.
