Peach Risotto

– 300 g red rice
– EVO to taste
– vegetable broth as needed
– 2 ripe peaches peeled, pitted and coarsely chopped
– Grana Padano to taste grated
– salt to taste
– white wine to taste


Heat some EVO in a pan and, while constantly stirring, toast the rice for 3-4 minutes. Then, start gradually adding the vegetable broth and let simmer. In the meantime, in a skillet, heat some butter and sauté the peaches, also adding a bit of white wine. When the rice is halfway cooked – ab. 20 minutes, add in the sautéed peaches and keep cooking for 20 more minutes. Turn the heat off when the rice is still “al dente” and then add in a little more butter, constantly stirring until obtaining a creamy texture. Finally, sprinkle with some Grana Padano and serve.
