– 250 g oat grains
– 3 tomatoes small diced
– 1 zucchini small diced
– ½ onion small diced
– 1 red sweet pepper small diced
– Grana Padano to taste grated
– 4 tbsps. basil pesto
– EVO to taste
Fill a pot with abundant salted water and cook the oat grains for ab. 45 minutes. Once cooked, drain and set the oat aside to cool. Meanwhile, place all of the vegetables in a large salad bowl, stir in the oat grains and mix well.
Finally, add in the pesto along with some EVO and set aside to marinate for ab. 3 hours.
Dress with some Grana Padano to taste just before serving.
