– 250 g sorghum
– 70 g basil leaves
– 40 g almonds
– 3 garlic cloves
– 30 g cashews
– EVOO to taste
– salt to taste
– 1 or 2 tablespoons of taggiasche olives
– 30 g of dates
While cooking the sorghum in water, prepare the homemade 100% vegan pesto by mixing all the ingredients into the mixer. If wanting to respect traditions, crush all the ingredients to have a thick sauce. Add salt and oil to taste. When the sorghum is ready, drain it, add the pesto and serve. Do not forget to add some decoration by using some basil leaves, dates and almonds on the top of each plate.
Sorghum will cook in about fifteen / twenty minutes.
Adjust the flavour, turn off, add the lemon juice, stirring for a moment and serve hot with a sprinkling of baking powder or peeled hemp. Not satisfied yet? Sprinkle some Grana Padano just before serving, you won’t regret it!
