Cuban-style Frijoles Rojo

– 400 g red beans
– 1 onion chopped
– 1 garlic chopped
– 1 sweet red pepper chopped
– 1 green pepper chopped
– 4 red tomatoes chopped
– 2 potatoes diced
– 100 g pumpkin diced
– cumin to taste
– vinegar to taste
– red wine to taste
– 1 tsp. sugar


Soak the red beans for 12 hours in cold water, then rinse, drain and cook them for ab. 50-60 minutes in abundant salted water. Once cooked, drain, setting the beans cooking water aside. Meanwhile, in a pan, heat a little EVO and sauté the garlic along with onion, peppers and tomatoes. Then, add in the potatoes, the pumpkin, a little vinegar, red wine and the sugar. Let it cook over high flame for 10 minutes. Finally, add the beans to the vegetables and cook over low heat, uncovered, for ab. 10 more minutes adding, little by little, the beans’ cooking water as needed. Serve hot.
